Name: Ilze Nix
Department: School of Arts and Sciences
My name is Ilze which sounds like the German Ilsa, don’t let the z confuse you. My parents tried to be different and take my name from something they liked (Ilsa) and mix it with a family name (Elizabeth) and whoop whoop I got stuck with a name most can’t pronounce right. I’m working on my Second Bachelors in Criminal Justice through UMUC Europe so I am very familiar with what it is like being a UMUC student. Criminal Justice (CJ) is just a pastime for me though, as my main academic area is Psychology. My undergraduate degree is from Bond University, Gold Coast Australia and I have an Honors Degree from the University of Pretoria in South Africa. I have a Master’s in Clinical Psychology from Western Kentucky University (WKU). Considering that my CJ degree is about to wrap up, I recently enrolled in a PhD program in General Psychology through Walden University. I truly LOVE learning and would be an eternal student if I can find someone who would pay me to do this as a career… Teaching is the closest I can get, as I find myself learning more than I ever expected each time I enter a classroom (or an online portal). I am truly looking forward to learning with each of you!

In my professional role, I am a school psychologist at a midsize public elementary school (approximately 700 students) located in a fairly large school district in SC. I have worked for a smaller district in the past in a more rural area where I was the only full time school psychologist and worked with all ages of children and adolescents. So I have experience in my field across demographics. I have also worked as a consultant for children with autism and their families. On the side, I market financial services and consider the area of personal finance a must for all! I also have more than 7 years of experience teaching psychology and critical thinking courses online. My educational history includes a Bachelors degree in Business (majored in marketing), Masters in Education (Instructional Accommodations) and a specialist degree in Applied Psychology (School Psychology concentration). I am currently working on my Ph.D. in Psychology. I recently completed the doctoral coursework, so I too understand what it feels like to be a student. Personally, my husband and I have three beautiful children. Our oldest is 20 and just moved into his first home. Our 17 year old just started college in California where she is pursuing a medical degree. She recently participated in a student ambassador trip in Africa. My 12 year old keeps busy with girl scouts and the visual and performing arts. I enjoy reading, doing puzzles, playing cards and socializing with a few close friends.

James, a Louisiana native, developed a love of food and cooking by spending time with both his grandmothers in the kitchen as a child and spending time with his grand-father in his small family garden. After working in restaurants for 5 years, he decided he wanted to be a chef and took up work at a local fine dining cajun/creole restaurant. His chef there influenced him to attend culinary school and in 2000 he began the culinary program at Johnson and Wales University in Norfolk, Va. While in school he worked full time under the tutelage of a former 2 Michelin star Belgian chef whose eagerness to teach became his culinary role model. Upon graduation his chef/mentor suggested that he go the world famous Inn at Little Washington to further develop his skills. After honing his culinary skills and nurturing relationships with local farmers he began to take a keen interest in sustainability and moved to The Blue Duck Tavern, a American restaurant with a modern twist that focuses on local and sustainable meat and produce. After 4 years he decided that he wanted to play a greater role in the production of natural, small scale food production and purchased a farm in the Shenandoah valley. After 17 plus years he is taking his former mentor's passion for teaching and his own desire to make a positive difference in our culinary society using it to hopefully give new culinarians an edge in the fast paced, ever changing culinary world.

In addition to his classical training at the Cambridge School of Culinary Arts, Chef Ryan has been cooking for over 20 years, absorbing the flavors and traditions of a variety of regional cuisines. Having lived throughout the East Coast, in the South, the Southwest, and in the West Coast city of San Francisco, he has become intensely familiar with the wide diversity of American culinary traditions. However, it is from his extensive travels abroad, sampling the cuisines of other cultures, that he gains his greatest inspiration. Spanish, Moroccan, Italian, French, and Asian influences are his specialties. With the sensibilities of a highly experienced cook, Chef Ryan takes great care in hand selecting fresh ingredients. He believes in keeping recipes simple so that the fresh ingredients can be fully appreciated and savored.
